Recipe
Preheat your oven to 180degC.
Grease and line a 20cm square baking tin.
Ingredients
200g rolled oats
2 mashed bananas
2 grated carrots,
1.5 tsp baking powder
40g raisins
50g dark chocolate
30g of mixed pecans and walnuts
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4tsp, ginger
1/4 tsp sea salt
1 tbsp chia seeds
Method
Combine all the ingredients and press evenly into the baking tin.
Bake for 25mins (or until firm and a skewer comes out clean)
Remove and allow to cool in the tin before then turning out onto a cooling rack to cool completely.
Cut into bars or squares (12 portions).
Store in an airtight container in the fridge for up to a week (as if they’d last that long!)
